Where do bananas go when they become overly ripe? To over-ripe banana heaven, aka banana bread. Everyone needs a good banana bread recipe. Inevitably, a few bananas in that bunch you just bought are going to turn brown. No matter how much you love bananas, it seems to be a fact of life. A Hearty Hash for Breakfast, Lunch, or Dinner

This recipe was born out of the desire to cook with what I had on hand. It required a bit of creativity, and I honestly didn’t expect all that much. A healthful supper, but not something memorable. But then the flavors came together. The natural affinity of black beans and sweet potatoes became apparent, and the aromatic seasoning brought the dish from plain Jane to something special. A Taste of the South, Developed in the North

It just so happens that today, January 11, is National Milk Day in the US. It’s also National Hot Toddy day, but unfortunately I don’t have an entry on that. Did you know that every day of the year is designated as at least one food holiday? Coincidentally in honor of National Milk Day, I bring to you buttermilk biscuits. Banana Chocolate Chip Pancakes

It’s doesn’t get much simpler than this. Pancakes. Fun to make, even more fun to eat. They’re not particularly time consuming yet still evoke images of lazy mornings. The best of both worlds. I made these one weekday when Evan started class a little later than normal. And honestly they’re not any more work than adding eggs to a box mix. Once you get the basic batter down – just a mixture of flour, baking powder, eggs, and milk – you can add pretty much anything else you want. This time I went with a combination of banana and chocolate chip, but go wild. Any mixture of fruit, nuts, and/or chocolate is bound to be a success. Continue reading “Banana Chocolate Chip Pancakes”
