Quickest Homemade Chicken Stock

Yield: 6 cups
- 1 3 to 4 pound chicken (the one I used was 1.84 kilograms), broken down
- 1 large onion, roughly chopped (skin on)
- 1 large carrot, roughly chopped
- ½ cup chopped fresh cilantro
- 4 sprigs fresh rosemary
- 6 sprigs fresh thyme
- 1 tablespoon dried oregano
- Salt and pepper
- Combine all ingredients in a pot with 8 cups water (or up to 14) on high heat.
- Bring to a boil then lower to a simmer.
- Cook for 30 to 60 minutes, until the chicken is done.
- Cool, strain, and season with salt and pepper.
- Set aside the chicken for another use and discard the vegetables.
