Quickest Homemade Chicken Stock

Yield: 6 cups
Ingredients
  • 1 3 to 4 pound chicken (the one I used was 1.84 kilograms), broken down
  • 1 large onion, roughly chopped (skin on)
  • 1 large carrot, roughly chopped
  • ½ cup chopped fresh cilantro
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 1 tablespoon dried oregano
  • Salt and pepper
Directions
  1. Combine all ingredients in a pot with 8 cups water (or up to 14) on high heat.
  2. Bring to a boil then lower to a simmer.
  3. Cook for 30 to 60 minutes, until the chicken is done.
  4. Cool, strain, and season with salt and pepper.
  5. Set aside the chicken for another use and discard the vegetables.
