Roasted Brussels Sprouts with Red Onion and Bacon

Roasting Brussels sprouts couldn't be easier, and brings out a wonderful nutty flavor while giving them a lovely, crispy texture. Throw bacon and red onion into the mix and you've got yourself one irresistible side.

Yield: 6 as a side
  • 1½ pounds Brussels sprouts, halved (and defrosted if frozen)
  • 3 slices bacon, roughly chopped
  • 1 large red onion, peeled and cut into thick slices
  • 2 tablespoons olive oil
  • Salt
  1. Preheat the oven to 400F.
  2. Toss the Brussels sprouts, bacon, onion, and olive oil together and season with salt.
  3. Lay flat on a baking sheet and roast, 30 minutes or until lightly browned. Shake pan halfway through to flip Brussels sprouts.
Gluten free Can easily be made Parve and Vegetarian by omitting the bacon - it's still delicious!
