Mango-Orange Smoothie and a Mango Blog Hop

As much as I love breakfast, I’m a terrible breakfast eater. I know that all the research says that people who eat breakfast are smarter and skinnier. But most days I just can’t bring myself to do it. I’m not hungry right when I wake up and since I work from home I typically linger for hours over my coffee while I start my day. And then it’s time to eat lunch! But I’ve been making an effort to eat breakfast, whether it’s a bit of oatmeal, yogurt and granola, or a bowl of cereal. Or smoothies. These have become my go to breakfast – quick and easy to make, full of nutrients, and just enough to tide you over until lunch.

Mango-Orange Smoothie with Chia Seeds

Since it’s mango season in Israel I’ve been eating them in everything. Mango pudding, mango chicken, and mango smoothies galore! Sometimes I keep it simple with mangoes and yogurt for a lasso-style drink, but for something a little more exciting I like to throw in orange juice and chia seeds for a boost. The edible seeds from the salvia plant, chia seeds are richer in omega-3 fatty acids than flax seeds, and are a good source of fiber, iron, calcium, and lots more. I love how they expand slightly in the yogurt, giving the smoothie a little added texture.

This mango-orange smoothie with chia seeds is the ultimate power breakfast, and the best way to get you energized to start your day.

Yield: 1 serving
Ingredients
  • 3 ounces (100 ml or almost ½ cup) freshly squeezed orange juice
  • 1 small or ½ large mango, peeled and chopped
  • ½ cup plain yogurt
  • 1 tablespoon chia seeds
Directions
  1. Put all the ingredients in a blender and blend until smooth. (Alternately, put them in a tall container and use an immersion blender.)
  2. Pour into a glass and enjoy!

    Mmm – I have been loving smoothies lately. Weekend morning’s, there’s nothing better! I always have cubed mango in my freezer for just such an occasion. I also happen to have an orange on hand, so come tomorrow morning, this will be my wake-up call. Can’t wait!

    Hehehe I am just like you… I can’t eat breakfast. I think it is due to the way I have grown up. Breakfast in Italy is very light: coffee/tea/milk and either cookies or croissants (which I usually skip too!). But for this smoothie I could gladly make an exception! πŸ™‚ YUM!
