I know everyone on the East Coast has already stocked up on groceries and other essentials this weekend in preparation for Hurricane Irene, as we all watch every moment of its journey North. My sister and many other friends had to evacuate from Red Hook to higher ground in Manhattan, and relatives in Long Island had to do the same. I wish I had a pantry meal ready to go for those who are homebound right now, but Iâ€™m running low on stockpiled recipes. Instead, Iâ€™ve got the next best thing: a cocktail.
This cocktail came into existence quite a few months ago when we had some people over for an impromptu cocktail party. I made it up for my friend and fellow food blogger Beth and it turned out to be a big hit amongst everyone. With just a few ingredients â€“ vodka or gin, pomegranate juice, grapefruit juice, and mint-infused simple syrup â€“ itâ€™s easy to make and a real crowd pleaser. Itâ€™s slightly sweet and quite tart, and the mint gives it backbone. Undeniably refreshing, itâ€™s also just as good sans booze for a non-alcoholic thirst quencher.
Knowing that I can be quite forgetful, especially with a few drinks in me, I wisely scribbled down the recipe and called it The B7, after Beâ€™er Sheva. I considered renaming it the Irene something after this weekendâ€™s hurricane but figure there will be plenty of cocktails named after her soon enough. Whatever you want to call it, cheers! - 1 ounce vodka or gin
- 1 ounce pomegranate juice (preferably fresh squeezed)
- Â½ to 1 ounce grapefruit juice (preferably fresh squeezed)
- Â½ ounce mint simple syrup
- Combine all ingredients and ice in a cocktail shaker and shake vigorously to combine all ingredients. Strain into a chilled cocktail glass and serve immediately.
Yield: 1 cocktail
